The FDA defines Active Managerial Control "as the purposeful incorporation of specific actions and/ or procedures by industry management into the operations of their business to attain control of the foodborne illness risk factors."
It is taking actions that will prevent a foodborne illness by:
- Knowing when to restrict or exclude an ill employee.
- Having knowledgeable, well-trained staff.
- Having a pro-active approach to identify, evaluate and control food safety hazards.
- Having Standard Operating Procedures.
- Knowing corrective actions.
- Keeping records and monitoring food quality and individuals handling food.
Food Safety Requirements- Nevada, Clark County
The Nevada Food Code requires that a person in charge be present during all hours of operation. The person in charge must be able to demonstrate knowledge of food protection and sanitation. (Nevada Administrative Code NEC 446)
A minimum of 2 hours of Food Safety is mandantory for foodhandlers. All foodhandlers (any employee coming into contact with food and/or food utensils, including managers) must possess a valid Food Handler's Health Card issued by the Clark County Health District. The Clark County Food Code requires that each food establishment must have a person in charge who can demonstrate knowledge of food protection and sanitation.
Course Descriptions
ServSafe® Manager CertificationServSafe® is an 8-hour food safety course sanctioned by the National Restaurant Association Educational Foundation and designed to provide food service managers with the knowledge necessary to meet state and national standards. The certification is valid for five years and can be used anywhere in the United States. The course is intended for food service managers, but is open to all food service employees. The registration fee covers all classroom materials.

Food Safety & Sanitation Certification
Completing a two-hour food service course provides a Nevada certification in food safety under the state's Food Protection Program. The certification is good for three years.
